To develop new antibacterial agents with the potential application in shrimp preservation, a novel chitosan oligosaccharide (COS)‐hydroxypyridinone (HPO) conjugate (COS‐HPO2) with strong antioxidant and anti‐tyrosinase activities was investigated for its preservation effect on shrimp.
