Abstract The problem of food security has brought food safety issues to global attention. Fast, simple, selective, and cheap food safety testing methods are urgently needed. As an analytical tool, organic fluorescent probes have advantages of high selectivity, simple operation process, low consumption and low cost. Given that the safety of drinking water is a universal need in the field of consumables, and that water is essential for life and intimately related to human beings, this review principally summarizes the recent advances in the use of organic fluorescent probes for food and drinking water safety testing. This includes the detection of metal cations, anions, inorganic and organic substances. To speed up the development of rapid methods for food and drinking water safety testing, the demand for organic fluorescent probes that can be used for food and drinking water fast detection is also discussed.
