Abstract In this study, isolation of crude oligosaccharides from Hericium erinaceus (CHOS), and its physicochemical properties and proliferative effects on lactic acid bacteria were investigated. CHOS was obtained by an integrated membrane technology with microfiltration (MF, PVDF 0.1 μm), ultrafiltration (UF, PES 1000 Da) and nanofiltration (NF, PA 300 Da) membranes as the retentate of NF. During MF, UF and NF processes, compositions of total sugars, total reducing sugars, total proteins, total polyphenols and uronic acid changed significantly. CHOS accounts for 14.84% of total polysaccharides and its purity was 63.71%. Other compounds in CHOS, including reducing sugar, protein, polyphenol, uronic acid and others were 8.06%, 4.83%, 5.65%, 6.45% and 11.30%, respectively. CHOS has a good proliferation effect on lactobacillus, which the best concentration accounts for 25% of the carbon source.
