Abstract Probiotic cells encapsulated within functional nano-microfibers and capsules produced by electrohydrodynamic (EHD) processing methods are reviewed. This review paper presents an overview of the EHD (electrospinning and electrospraying) technologies fundamentals and the most used polymers to encapsulate probiotics by EHD. Depending on the properties of the polysaccharides, proteins, or hybrids compounds utilized for probiotics encapsulation by EHD, the functionality of the tailor-made fibers and capsules can be developed to facilitate high encapsulation and long-term stability of live probiotics cells. The advantages and the efficiency of the electrospun fibers and electrosprayed capsules to encapsulate, preserve the survival and facilitate the targeted delivery of the coated probiotics towards the gastro intestinal track, are also presented.
