Abstract In this study, gliadin particles (GPs) prepared by an in situ method was used as fillers to construct chitosan (CS)-based biocomposite films. Tannic acid (TA) was used as the stabilizer and modifier for the CS/gliadin composites. The micrographs of composites indicated that the addition of TA into the CS/gliadin composites changed the shapes of GPs from oval to sphere and decreased the particle size of GPs in the composites. The TA could also act as a bridge to link the GPs and CS in the composites and enhance the interactions between the GPs and CS matrix. As a result, the tensile strength of CS/gliadin composites was enhanced by the addition of TA.
