Abstract The developmental stages can affect the bioactive and nutritive compounds of seeds. Date palm (phoenix dactylifera L.) seed is a good source of mineral nutrients and phenolic compounds. In this study, changes in minerals, antioxidant compounds (phenolics, tannins, and flavonoids), and phenolic profile of date seeds (cultivar Mozafati) were investigated at four-week intervals from 4 to 16 weeks after pollination (WAP). Ca, K, Mg, and Mn decreased from 4 WAP to 16 WAP, while the level of P, Zn and Fe increased from 4 WAP until 12 WAP and dropped in 16 WAP.
