Abstract The aim of this study of isothermal kinetic simulation was to evaluate the parameters of growth reactions and storage conditions for Lactobacillus plantarum (L. plantarum) and Lactobacillus casei (L. casei) of lactic acid bacteria (LAB). Among the considered concentrations kinetics could be estimated best for 7.40 × 105 & 7.4 × 106 and 6.55 × 104 & 6.55 × 105 CFU/mL by isothermal microcalorimeter (TAM Air) tests, respectively. Comparisons of nth order and autocatalytic reaction simulation to compute the parameters were made, which determined the autocatalytic kinetic model that was beneficially applied on the LAB. We obtained the parameters of the LAB, which included the activation energy (Ea), the natural logarithm of pre-exponential factor (lnk0), the enthalpy of exothermic reaction (ΔH), the isothermal heat effect under 4–90 °C conditions, and the culture reaction temperatures for 24 h maximum growth rate.
