Abstract Background At present, a variety of plant polysaccharides have been successfully discovered and widely used in health food and medicine. Scope and approach Various extraction methods of plant polysaccharides were reviewed. The advantages and disadvantages of these methods and their influencing factors were analyzed. From the point of view of protein content in polysaccharide extraction, three common deproteinization methods were analyzed and compared. Key findings and conclusions Plant polysaccharides widely exist in nature and have a variety of biological activities. The extraction methods include water extraction and alcohol precipitation, acid (alkali) extraction, enzyme-assisted extraction, supercritical fluid extraction, ion exchange technology, ultrafiltration membrane extraction technology, ultrasonic extraction technology, microwave-assisted extraction technology and the combination of various technologies. The experiments have proved that different polysaccharides have different extraction and deproteinization methods.
