ABSTRACT One of the most critical factors for a restaurant’s success is the need to select an optimal location. A model to assess the restaurant’s current location and select a future location was designed to address this problem as one of the top priorities. As a case study, the theme restaurants at Cancun, México were used. The obtained tool resulted from combining the theory for designing an Analytic rubric with the Analytic Hierarchy Process theory; this last one allowed to rank the factors and subfactors used to assess the location. This paper presents the quantitative research approach that includes the weight and ranking of the factors and subfactors obtained through the Analytic Hierarchy Process method and statistical validation of the empirical study results through regression analysis.
