based on porridge made of millet/sorghum flour, that is, porridge is the principal cooked food. As two neighboring countries, Egypt belongs to the Near Eastern, wheat-barley bread eating world, while Sudan (from south of middle Nubia) is part of the African sorghum porridge eating tradition (Haaland, 2007). Considering Sudan lies within the tropics, it is not surprise that the Sudanese may consume the porridges at high temperatures.
