This paper shows the development of a graphical interface and electronic instrumentation based on a programming algorithm for the simultaneous measurement, monitoring and visualization of magnitudes of pH (hydrogen potential), Na+ (sodium ions) and O2 (oxygen) present in conventional and nonconventional yeast. The data obtained experimentally with the methodology proposed in this work, are used for the characterization of different biochemical processes such as yeast fermentation. The electronic instrumentation is validated by correlating the linearization coefficients of the pH, Na + and 02 sensors (09951, 0.9929 and 1 respectively). Finally, the algorithm performed is validated in the LabView graphical platform correct.
